Shrimp in Chipotle-Bourbon-Butter Sauce - the Recipe Method
To make this wonderful dish, you’ll start out by adding the Chipotles in Adobo and fresh garlic to a food processor and processing it until it is nice and smooth.
Next, heat a medium sized pan and melt your butter over medium heat, then add in the chipotle-garlic sauce along with the bourbon and honey. Give it all a quick stir and let it simmer about 15 minutes to let the flavors start to meld.
You can smell the tang and the zing in the sauce as it simmers, so apologies if it drives you a bit wild.
Finally, stir in your shrimp and let them simmer in the sauce for 10-15 minutes, checking on them around 9 minutes or so to see how done they are.
They should be cooked through and have a bit of snap to them. The shrimp will absorb all that wonderful, tangy, slightly spicy sauce and believe me when I say you’ll find yourself wanting this dish again in the very near future once you give it a taste.
SO GOOD! I'm already craving more...

This is a very easy recipe, and it cooked up nicely. There is a fair amount of heat, however, and it needs to be paired with something to counter the heat without messing with the flavors. It definitely needs a starch, and rice goes well with this dish. There's a lot of sauce with the shrimp to mix with the rice. Just by chance, since we did a green salad, we discovered that fresh greens have a soothing effect on the chipotle, too. Next time, I'm going to add a spring mix with baby spinach and arugula in the bowl with the rice and shrimp so every thing is in one place. Oh, and bourbon over ice in a glass pairs well with this dish!

In the end, it may be too spicy for me. But it looks too good not to try! Never had shrimp with bourbon and it sounds like a good match.
